How To Make Meatless Meatballs

On today’s episode of Live Lean TV, I’m sharing a tasty vegetarian meatballs recipe, including a step-by-step video, on how to make meatless meatballs.

Yes, we are back in my kitchen with another delicious cooking video from our Brad’s Cookbook series.

This was another request from my faithful, beautiful, lean, and sexy Live Lean TV viewers.

Actually, this request was from a dude, so I’ll just call him faithful and lean!

The request was for a cooking recipe video, showing how to make a delicious, but healthy meal, using lentils.

Now I admit, even as a kid growing up, I didn’t eat lentils very often, and I still don’t today.

The reason I don’t eat lentils very often, is my body doesn’t respond well to legumes.

However, if you’re a vegetarian or vegan, lentils, when combined with brown rice, make a complete protein, that contains all the essential amino acids for muscle building.

Thumbs up to muscle building, especially if you’re a female!

Plus, lentils are a food that is high in fiber.

Since I’m not a vegetarian, rather than start the recipe creation process from scratch, I received this tasty vegetarian meatballs recipe from my friend Lindsay, over at the Lean Green Bean blog.

She was happy to hook up the Live Lean Nation with her meatless meatballs recipe.

So I’m going to show you how to make meatballs, the vegetarian way.

I haven’t made this vegetarian recipe before, so I’ll be experimenting with it, just like you.

Alright back to the lentils

The base of the meatless meatball is made up of lentils.

If you’ve never had lentils before, or are wondering how to turn these weird looking things into a delicious recipe, follow along with the cooking video.

Also, if you love pesto like I do, you’ll love the flavor it brings to these meatless meatballs.

You’ll need a high powered blender or food processor

To blend the lentils and brown rice together, you’ll need to use a high powered blender or food processor.

I used my favorite machine in my kitchen, the Vitamix.

Even though the Vitamix is not cheap, I highly recommend you get one as they can do everything.

They are not cheap, but if you love to cook, you will not regret this purchase.

Ingredients
  • 2 cups lentils (pre-cooked: make sure you cook the lentils before you make the meatless meatballs. Cook them according to your package directions.)
  • 1/2 cup brown rice (pre-cooked: make sure you cook the brown rice beforehand)
  • 2 whole eggs
  • 1/2 cup ricotta cheese
  • 2 cloves garlic (diced)
  • 1/3 cup onions (diced)
  • 1/3 cup bread crumbs (broken into small crumbs)
  • 1 tbsp pesto
  • dash Black Pepper
  • 1 tsp Paprika
  • 1 tsp oregano (dried)

How To Make Meatless Meatballs
Instructions
  1. Pre-heat your oven to 375F.
  2. First step is to add the lentils and brown rice to a blender or food processor. Pulse several times to combine the two ingredients together.
  3. After the lentils and brown rice is mixed together, simply add the mixture to a large mixing bowl.
  4. The next step is easy, simply add all the remaining ingredients into the mixing bowl. This includes the whole eggs, ricotta cheese, diced garlic, diced onion, bread crumbs, pesto, black pepper, dried oregano, and paprika.
  5. Once all the ingredients are in the mixing bowl, just like with other meatball mixtures, it's time to get your hands messy, by forming golf ball sized meatless meatballs.
  6. Place the meatless meatballs on a baking sheet (tin foil optional), and add to the preheated oven for 15 minutes. After the 15 minutes is up, flip the meatless meatballs, and cook for another 10 minutes. After that, they should be ready.
  7. While you wait, clean up the mess in the kitchen.
  8. Once the buzzer goes off, remove them from the oven, and check to see how they look and smell. Let them cool down, then give them a taste.

These vegetarian meatless meatballs turned out great.

They looked like meatballs, and they even smelled better than most meatballs.

  1. Hey Brad. Anxious to try this recipe but in watching the video and reading the recipe, they do not coincide with one another. In the video, you mention that you put in 1 tablespoon of pesto, which is not even listed in the ingredients for the recipe. You also state that you put in 1 tablespoon of paprika, when the recipe calls for 1 teaspoon. Like I said, would like to try this recipe but want to make sure exactly how to make it. If a measurement is off, this screws things up.

  2. ‘Meatless meatball’! Sound is much interesting!! I’m excited to taste it a soon as possible. Though I’m not a good cook but like to follow the cooking shows so thanks for the video clipping.

  3. I am not a big bean person. But my daughter is a vegetarian & they do look like they might be a good thing to try. I was wondering if you had come across any recipes for baked beans that do not require alot of sugar?
