1largesweet potato(480g peeled)

Juice of 1/2 lemon
3tbspExtra virgin olive oil
avocado oil spray
Instructions
Pre-heat oven to 375F.
Add a 480g large peeled sweet potato, cut into 3 pieces, to a saucepan covered with water.
Cover the pot and bring the water to a boil.
Once boiling, reduce the heat to low and let it simmer for approximately 5 minutes, until the potatoes are just tender, but not fully cooked, since they will be baking in the oven.
While the potatoes are boiling, blend 1/2 apple with 1/2 cup of water, then add it to a saucepan along with 1 tsp nutmeg, 1 tsp cinnamon, 1 tsp lemon zest, and 1/2 tsp sea salt.
Simmer over low heat for 3 minutes.
Stir in the juice from 1/2 lemon and 3 tbsp of extra virgin olive oil to the saucepan.
Once sweet potatoes are tender, drain off the water, and let them cool down, then cut them into bite size cubes.
Spray a large baking sheet with avocado oil cooking spray, then place the sweet potato cubes on the baking sheet, in a single layer, without piling them on top of each other.
Pour the liquid over the sweet potatoes, then place the baking sheet in the oven.
Bake for 30 minutes, then remove and enjoy.
