When I was in NYC this past week, I had the pleasure of tasting a healthy coconut macaroon recipe, that only used simple ingredients.

It was delicious, but as biased as I may be, it’s wasn’t as delicious as this easy and tasty coconut macaroon recipe, that I’m about to share with you.

  • 2 cups shredded coconut (unsweetened)
  • 1/2 cup almond flour
  • 1/4 cup cacao nibs
  • dash Sea Salt
  • 2 tsp vanilla extract (pure)
  • 2 tbsp Coconut Oil (melted)
  • 1/2 cup Maple syrup (pure)
  • spray avocado oil spray (or use coconut oil)
  • Chocolate Protein Powder (OPTIONAL)

Chocolate Coconut Macaroons
Instructions
  1. The first thing to do is pre-heat your oven to 350F.
  2. In a mixing bowl, add 2 cups of unsweetened shredded coconut, 1/2 cup of almond flour, 1/4 cup of cacao nibs, a dash of sea salt, 2 tsp of pure vanilla extract, and 2 tbsp of melted coconut oil. This smells delicious. OPTIONAL: If you want to increase the protein content, you can also add chocolate protein powder to the mixture, if you like.
  3. Give it a quick stir to mix it up. Once it's slightly mixed up, slowly add in 1/2 a cup of pure maple syrup, making sure you spread it all around. Stir it well to blend all of the ingredients together. You will not believe how good and absolutely delicious this smells!
  4. OPTIONAL: add the mixture to a food processor and blend for 5-10 seconds. This will help bind all the ingredients so it sticks together better. At this point of the recipe, you can also form the mixture into macaroons and eat them raw. They taste absolutely incredible raw as well.
  5. Get your baking sheet out and grease it with avocado oil spray. You can also coat the baking sheet with coconut oil. Be sure to spread the oil all over the baking sheet because the macaroons will stick if you don't. Coconut oil is great for the skin, so rub any excess into your skin.
  6. Scoop a tbsp of the macaroon mixture into your hands and form it into a packed ball. Place it on the baking sheet and repeat. That's it.
  7. Put them in the oven, pre-heated at 350F, for 15-18 minutes, or until they are slightly browned. So keep an eye on them as they bake.
  8. Once the buzzer goes off, it's time to go. Remove them from the oven and let them cool down for 5-10 minutes. Enjoy.

Can I Add Protein Powder To The Chocolate Macaroons Recipe?

I know a lot of you are going to ask what these coconut macaroons taste like if you add protein powder.

When I originally made the recipe, I made half of the macaroons with protein powder, and the other half without protein powder.

Both the protein and non-protein variations tasted freaking delicious.

So if you want to add more protein to your diet, add chocolate protein powder to the recipe.

Can You Eat The Chocolate Macaroons Raw?

Yes you can.

I tasted the non-protein and protein versions raw, and both tasted incredible.

After baking them, I also put these bad boys to the taste test.

Once again, both the baked protein and non-protein macaroons were delicious.

Damn That’s Good, Damn That’s Good, Damn That’s Good!

No joke.

This is the only Live Lean TV Brad’s Cookbook episode to get 3 “damn that’s good”, back-to-back-to-back!

Even though we used all natural ingredients and didn’t add any of that “white crack” to the recipe, i.e. refined sugar, these chocolate coconut macaroons still turned out delicious.

    chocolate chips and less shredded coconut (I’m not a huge fan of shredded
    coconut). It was delicious!! Thanks Brad and Jessica for helping me live

  2. I have made these twice now. Wow, are they ever delicious! The first time I used agave because I didn’t have maple syrup and they didn’t stick together and burned really fast. This time I made it with the 100% maple syrup and man oh man, they came out PERFECT.

  3. Haha, I have the exact same coconut oil, sea salt, and vanilla as you. YAY for Costco!! Mine are in the oven right now but I didn’t have any almond flour so I used a packet of vegan Shakeology for my protein powder and to help make it stick together.

    I just made these with coconut flour and they turned out just fine. Next time I will likely add just a bit of egg whites in this to hold them together better. They were very crumbly and kinda fell apart when I took a bite of them. Overall, very good. Actually a bit too sweet for me..go figure.lol

  12. Thanks for replying. I’ve been eating healthier and working out for the past 16 months. I have lost 60 pounds. I would like to lose at least 15 more but I seem to be struggling more to lose these last pounds, any suggestions/advices would be great thank you!

    1. Ummm, Brad, I just checked the label on 100% pure organic maple syrup and that stuff has 50 grams of sugar per 1/4 cup! If I followed your recipe and added a half cup of that, it would be roughly in the ball park of 100 grams of sugar! I know you divide it up into the little balls but that seems high. I’ve been eating paleo since January and have dropped 50lbs. I’m just a little worried about all that sugar. I even make sure I don’t consume too much fruit throughout the day. I was trying to think of a substitute, like dates, but then the consistency would be off from less liquid in the recipe. I know you’re a busy man, but I just wanted to pick your brain.

  15. There are a tonne of fitness experts on youtube that don’t go into enough detail when it comes to a healthy diet. They just say “more of this” or “more of that”. This is why I think Brad is the best there is. He gives this important part of health and lifestyle the attention it deserves.
