This delicious, healthy, and very colorful Orange Sesame Chicken Salad recipe gives you a sneak peak, as it’s one of the recipes from our Eat Clean Live Lean Cookbook.

So for this chicken salad recipe, we’re using a few different colorful ingredients that can be prepared very quickly.

Ingredient notes:

  • Go with organic spinach when possible.
  • Since spinach is a free food, dump as much of it into the bowl as you want.
  • It’s quicker and easier to buy carrots that are already pre-shredded.
  • We used naval oranges, but any type of orange works.
  • The oranges will make it very juicy.
  • It’s always important to add a good serving of a muscle building protein source to your salads, such as chicken breast, to fill you up and keep you lean.
  • We’re using pre-cooked chicken that we already had prepared in bulk to use later.
  • The sesame seeds add a crunchy texture and is also a healthy source of fat.
  • If you’re wondering about the salad dressing, we’re using nature’s salad dressing, lime juice.

This orange sesame chicken salad recipe is so easy to prepare.

It also contains so much color and tons of vitamins and minerals.

  • 4 handfuls baby spinach (go with organic when possible)
  • 1 cup carrots (shredded)
  • 1/3 cup raisins
  • 2 oranges (thinly sliced)
  • 1 pound chicken breast (pre-cooked and sliced)
  • 2 tbsp sesame seeds
  • 1 lime juice

Orange Sesame Chicken Salad
Instructions
  1. This is so easy. Throw a bunch of spinach into a bowl. Just try to make sure you get it into the bowl. That's important.
  2. Next, add 1 cup of shredded carrots, 1/3 cup of raisins, and 2 thinly sliced oranges into the bowl.
  3. Next, we need to add some protein to build muscle. We're using pre-cooked sliced chicken breast.
  4. Top the salad with 2 tbsp of sesame seeds.
  5. Cut a lime in half, and if you need to work on your forearm strength, grip it and squeeze the juice on top of the salad. Always get your workout in, no matter where you are.
  6. Add the salad to 4 plates and eat it right away.

After taking a bite of this salad, even if your mouth is full, I still want you to yell, “Damn That’s Good!”.

  1. For vegan people, you can replace the chicken with tempeh, an absolutly healthy substitute for meat, high in protein, low in fat, and delicious ! :0)

  2. Hi Brad.

    I have recently found a diet that says: no carbohydrates (max 40 a day) and eat the same kind of food every day. in other words salad and chinken only (plus water to drink). It says tthat you can loose op to 0.5 kilo a day (1.1 punds) First of all is it healthy? and if it is, is it then good to put in with the P90X training program?
    Hope i will soon hear from you.

  3. I don’t eat salads alot, because when i do i don’t use dressing because i can’t find a good healthy one. So i go about 2 days of eating a big healthy salad (no dressing) and i give up on it. I still do the veggie drink for dinner w some protein like i stated before as much as possible, especially to get my greens in. This salad looks pretty good ,the lime might do the trick for me , along with the orange. definately going to try it, and very pumped for that recipe book. Just made your turkey burgers the other night, a nd they were delicious. Also did the meltdown last night and loved it! Make it fun, but challenging at the same time, you know what your doing.

  6. yeah!! thanks! we had a great time filming it. Yes! It’s so much easier to eat healthy when you make bigger quantities and save some for later. That way you’re not cooking all day every day. Pre-Prepping is the way to go!
