On today’s episode of Live Lean TV, I’m showing you how to make a gluten free protein pancake recipe without protein powder.

This healthy grain free protein pancake recipe is delicious and only uses simple, everyday ingredients.

So with that said, let’s get into today’s protein pancake recipe.

Gluten free protein pancakes recipe notes:

  • This gluten free protein pancake recipe makes one serving, so if you’re making it for your family, double or quadruple the ingredients.
  • We’re using egg whites instead of whole eggs because this recipe already contains a lot of other healthy fat sources.
  • To figure out how much 6 eggs whites is, look at the instructions label on your egg white carton.

Egg white conversion for recipe purposes:

  • 2 tbsp = 1 large egg white
  • 1/4 cup = 2 large egg whites
  • 1/2 cup = 4 large egg whites

Based on this, 6 egg whites would be 1/2 cup + 1/4 cup = 3/4 cup of egg whites.

How to make nut flour

Since this is a grain free and gluten free protein pancake recipe, we’re using 1/2 cup of ground nuts to replace the wheat flour that would typically be used to make the pancakes.

This 1/2 cup of nuts is comprised of 1/4 cup of almonds and a 1/4 cup of walnuts.

To ground the nuts, simply add them to a blender or food processor.

You could also buy ground nut flour.

  • 6 egg whites (3/4 cup liquid egg whites)
  • 1/4 cup almonds (ground)
  • 1/4 cup walnuts (ground)
  • 1 capful vanilla extract
  • 1 dash Cinnamon
  • 1 packet Stevia
  • 1/8 cup shredded coconut (unflavored)
  • 1/4 tsp baking soda
  • 1/4 cup blueberries
  • 1/4 cup raspberries
  • avocado oil cooking spray

Instructions
  1. Add the following ingredients to a blender or food processor: 3/4 cup of egg whites, 1/4 cup of ground almonds, 1/4 cup of ground walnuts, capful of vanilla extract, a dash of cinnamon, a packet of stevia, 1/8 cup of shredded coconut, and 1/4 tsp of baking soda.
  2. Blend for approximately 20 seconds or until the protein pancake batter reaches a smooth consistency.
  3. Add the 1/4 cup of blueberries and 1/4 cup of raspberries to the protein pancake batter mixture.
  4. Heat your pan over medium-high heat and lightly coat with avocado oil spray.
  5. Add a 1/4 cup of the protein pancake batter to the pan and heat the pancake for 1-2 minutes or until small bubbles begin to form on top.
  6. Flip the pancake to heat the other side for approximately 1 minute, then remove the cooked pancake and add to a plate.
  7. Repeat to use up the remaining protein pancake batter.
  8. Makes 4 protein pancakes.

Nutrition Facts (per serving - 4 protein pancakes):

Calories: 567

Protein: 33g

Carbohydrates: 21g

Fat: 39g

Another one of the great things about this gluten free protein pancake recipe is you don’t need to add any sugary syrup.

You could add maple syrup if you want, but it’s not needed because the berries and stevia add sweetness.

How To Make A Gluten Free Protein Pancake Recipe Without Protein Powder

It’s also not a dry protein pancake since we don’t add protein powder to it.

Typically when you add protein powder to your pancakes they can become dry if you don’t prepare them properly.

But since we’re using egg whites for the protein, it makes a fluffy and moist protein pancake.
