On today’s episode of Live Lean TV, I’m showing you a super moist and easy blueberry muffins recipe that I call, the “anti-muffin top” muffin.

Since I was in the mood, and craving some blueberry muffins, lets head into the Live Lean TV kitchen and put together this easy recipe.

By the way, I call it the “anti-muffin top” muffin, because it contains all healthy paleo ingredients that are “gainz friendly”, and designed to get you lean, while making your tastebuds happy.

My first blueberry muffin recipe attempt was a flop

As you’ll see in the video cooking recipe, I failed at my first attempt in making this blueberry muffin recipe.

The blueberry muffins came out dry and tasted very bland because they didn’t have any sweetness or flavor.

And as you know, we don’t recommend eating dry and bland foods on Live Lean TV!

All of the ingredients I used on the first attempt, were correct, and are still in the final recipe, but I was missing two key ingredients to make these blueberry muffins super moist and delicious.

  • 1/3 cup coconut flour
  • 1/2 cup Rootz Paleo Protein Powder (discount code and link is above)
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • dash Cinnamon
  • 3 whole eggs
  • 1/4 cup + 1 tbsp Coconut Oil
  • 1/3 cup almond butter
  • 1 tsp vanilla extract
  • 3/4 cup applesauce (unsweetened)
  • 1/3 cup Maple syrup

Instructions
  1. Pre-heat oven to 350F.
  2. Add coconut flour, Rootz Paleo Protein powder, baking powder, baking soda, and cinnamon to a bowl and mix.
  3. Once the dry ingredients are mixed together, add the whole eggs, almond butter, vanilla extract, applesauce, and maple syrup to the same bowl, and mix together to form the blueberry muffin batter.
  4. Fill each muffin tin to 3/4 full, then add a few blueberries to each muffin. Press the blueberries into the middle of the muffin.
  5. Add the blueberry muffins to the pre-heated oven and bake for approximately 20 minutes, or until baked throughly.

This blueberry muffins recipe came out so moist, so delicious, and looking so good.
